Goji Berry Crunchy Nut Bars

Ok so this may actually change your life. It's sweet, chocolatey and crunchy. It will give you a good dose of antioxidants, magnesium, protein and dietary fibre, and what's even better, contains NO refined sugar.

Goji Berry Crunchy Nut Bars

Makes 16 bars or 32 squares

Ingredients base layer

200g deglet noir dates
50g other nuts (I used pecans and walnuts)
100g almonds
100g desiccated coconut
6 tbsp raw cacao
75g coconut oil, melted

Ingredients top layer

1/2 cup cacao butter, melted
1/3 cup raw cacao powder
Pinch of salt
2-3 tbsp pure maple syrup

Preparation

To make the base layer, blitz the nuts in a food processor until you have a chunky crumb, then add the remaining ingredients and process until combined. Press firmly into a parchment lined tray and pop into the fridge to set.

Meanwhile make your chocolate coating. Melt the cacao butter in a glass bowl above a small amount of lightly boiling water (don't let the glass touch the water). When the butter has almost completely melted turn off the heat as you'll impair the butter if it gets too hot and may get a thick goey mess (learn from my mistakes!) Add the rest of the ingredients to the bowl and mix well. Then simply pour the chocolate on top of the base layer, sprinkle with goji berries and pop back in the fridge to set.

When set, slice your block any way that takes your fancy and enjoy!
