This is my absolute favourite granola recipe. It's crunchy, sweet and keeps me full for hours thanks to the masses amounts of nuts and seeds it contains. I love this on it's own with almond or cashew milk, served with some porridge and banana, or as a treat with a dollop of greek yoghurt and fresh berries. The one problem with it is that even when I make three jars of it it doesn't seem to last long in this house!
My Favourite Granola Recipe
- 1/2 cup coconut oil
- 1/2 cup honey
- 4 cups oats
- 1/2 cup unsweetened desiccated coconut
- 1 cup almonds, roughly chopped
- 1 cup hazelnuts
- 1 cup cashews
- 1 cup pecans
- 1 buckwheat groats
- 1 tbsp ground cinnamon
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/2 cup flaxseed
- 1/4 cup chia seeds
- 1 cup chopped dried fruit (I tend to use dates and apricots but you can use anything that takes your fancy)
Line two baking trays with baking parchment and preheat your oven to 180 C fan (200 C).
Heat the coconut oil and honey in a small saucepan over a low heat and stir well (it doesn't matter if it's not completely combined), then pour over the top of the oats, nuts and buckwheat groats and mix until everything is coated.
Tip the mixture out onto the two trays and bake for 25-30 minutes, stirring every 10 minutes so it doesn't burn.
Once cooled, add the rest of the ingredients and store in an air tight container, or three!
