This cashew milk is packed with protein and healthy fats to help keep your blood sugar stable and energy levels up, and is a delicious dairy free alternative that can be used on your granola, in a smoothie or to make a warming hot chocolate (my favourite use!).
Ingredients (use organic where possible)
- 100g cashews, soaked overnight (ideally in filtered water)
- 400ml water (again, ideally filtered)
- 1 tsp raw honey
- 1/2-1 tsp vanilla power or good quality essence, or seeds from 1/2 a vanilla pod
- Pinch of salt
Drain and rinse your soaked cashews, add them to your blender with the remaining ingredients and blitz until you have a smooth milk. In a high speed blender like my blendtec or in a nutribullet, this should only take 60 seconds or so. If using a lower powered blender it may take 3-4 minutes.
