As I mentioned in my recent post on Top 10 Tips to Create the Perfect Salad, a dressing can make or break its success. Get it right and your salad goes from being an interesting combination of flavours and textures into a well versed and thought through meal in it's own right. Get it wrong, and the results are disastrous. All the hard work you put into prepping the leaves, vegetables, meat if you're having it... all gone to waste! My go to dressing until a few months ago was Mary Berry's Salad Dressing. That was until I looked at the ingredients and saw it had added sugar in it! Ok, so I liked it because it was nice and sweet, but it's so easy to get the same flavours with a few simple ingredients from your own cupboard, without opening a bag of sugar.
This goes perfectly with my kale, squash and beetroot salad, but you can add it to any salad as a naturally sweet yet tangy dressing.
- 3 tbsp extra virgin olive oil
- 3 tbsp balsamic vinegar
- 3 tbsp red wine vinegar
- 3 tbsp maple syrup
- Pinch salt
- Larger pinch ground black pepper
- Put all ingredients into an old jam jar
- Pop the lid on and shake it up
With any salad dressing you should always adjust it to suit your taste. So if this is too sweet for you, try adding more oil, more vinegar or more balsamic. Or how about adding some dried herbs or crushed garlic? Play around with it, or just keep it as suggested below.
